DOUGH
4 cups of All Purpose Flour
1/3 Cup of Shortening
1 + 1/2 of WARM water
1 teaspoon of salt

Combined Flour and Salt, then add the shortening, then mix it all together, until the mixture is like sand. When it comes to that point, SLOWLY add the warm water until it's all mixed together. When dough comes together and feels like a breast, it's ready to roll out and be folded into the dumplings.
Boils the dumplings until they float. That is how you will know they're done.

FILLING (My version):
5-10 large potatoes (Not Sweet)/Or as many as you think you'll need.
Chedder cheese, as much as you want.
Bacon (optional)

Boil potatoes, then mash and add cheese/bacon when potatoes are mashed and still hot. Let cool for a while.

Topping:
1 1/2 blocks of butter
3-4 large onions

Melt the butter, then saute the onions until soft and how you like them.
This is used to coat the pierogies

DANGOS + Sweet Sauce
DANGOS
2 cups glutinous rice flour
3/4 to 1 cup boiling water
1 T fine sugar (optional)

SWEET SAUCE
7 Tbp Soysauce
2 tbp of Cornstarch
3/4 cup of sugar
3/4 cup of water

NIKUMAN / CHINESE STEAMED BUNS!
Dough:
1 packet of Active Dry Yeast
1/4 cup of warm water.
---
3 cups of flour
1/4 cup of sugar
1/2 cup of warm water
1/2 cup of warm milk
1/2 tsp baking powder
1 tbsp of shortening, melted

BBQ CHICKEN FILLING
3 LARGE Boneless/skinless chicken breasts cubed.
1/2 cup of Honey Garlic Diana's Sauce**
2 tsp of Soy Sauce
1/4 cup of teryaki sauce
1 tsp sesame oil

NOTES:
** Use whatever BBQ sauce you have on hand, I just use this because it's what I buy.
*** I don't find I need the extra half cup, but do what you will for it!

THIS RECIPE IS NOT LACTOSE FREE.

CHINESE DUMPLINGS/POT STICKERS
Filling:
2lbs of ground beef
8-10 cloves of minced garlic
3/4s of a large white onion (minced)
1-6 squirts of soy sauce
1/4 of a cup of teryaki sauce
2 tsp of corn starch

Dough:
I made this twice and still had some dough to spare. It IS freezable, please note this.
2 cups of all purpose white flour
1/2 cup of warm water
flour for work surface
